What is Coffee Roasting?

Coffee roasting is the process of heating raw coffee beans until they transform into brown, aromatic beans. During roasting, natural sugars caramelize and oils rise to the surface, creating flavors we enjoy in every cup. Depending on how long the beans are roasted and at what temperature, the flavour can change from fruity and bright to bold and smoky. Roasting is what makes coffee taste like coffee.

What Are the Types of Coffee Roast?

There are four main types of coffee roasts, and each has its own flavour and feel.

  • Light Coffee Roast

Light roasts are for those who love clarity, brightness, and the unfiltered story of the bean. Roasted between 350°F and 400°F (roughly 177°C–204°C), these beans have a pale brown colour and a dry surface. You’ll taste floral notes, citrus, sometimes even hints of cardamom or orange peel, just like a well-made South Indian filter but with an extra zing.

  • Medium Coffee Roasts

Medium roasts are the all-rounders. They are balanced, universally loved, and full of comfort. Roasted at 410°F to 425°F (210°C–218°C), medium roasts are medium brown, with a strong aroma, rounded sweetness, and just enough acidity. Notes of chocolate, caramel, and toasted nuts often emerge, reminiscent of the aftertaste of a good Mysore Pak.

This is the roast most Indians unknowingly drink at cafes and homes, and it’s a safe bet for both black coffee and milk-based drinks. Medium roasts are often called “American roasts” globally, but here, they’re just “the regular.

  • Medium-Dark Coffee Roasts

Medium-dark roasts are where things start to get interesting. Roasted just before or after the second crack, at a temperature of 425°F to 435°F (225°C to 230°C), these beans develop a rich, dark brown color with a slight sheen of oil. The flavors become bolder and more complex, like bittersweet chocolate, spice, and a heavier mouthfeel. Acidity drops further, and the body becomes fuller.

This roast is perfect for those who want a robust cup but still crave some of the bean’s original character. It’s the best of both worlds: depth without overwhelming bitterness. 

  • Dark Coffee Roasts

Dark roasts are the extroverts- bold, intense, and impossible to ignore. Roasted at 435°F and above (240°C to 250°C), these beans are almost black, with a glossy, oily surface. The flavors are dominated by the roasting process itself: smoky, toasty, sometimes even a little burnt (in a good way). Acidity is at its lowest, and the body is full and heavy. The original flavors take a back seat, making way for deep, roasty notes of dark chocolate, caramel, and spice.

If you love espresso or strong, punchy brews, dark roasts are the way to go. They stand up beautifully to milk, sugar, and flavorings, making them a favorite for lattes and cappuccinos.

A student pulling a late night may prefer a light roast for its higher caffeine, while someone relaxing on a Sunday might reach for a dark roast for its intensity.
