Las Margaritas Red Bourbon – Honey Sun Dried (Colombia)

We bring you the first of two lots this year from Colombia’s most prestigious super-specialty producer – Café Granja La Esperanza. They manage 3 farms: Cerro Azul, Potosi and Las Margaritas. This lot is the exotic variety from Finca Las Margaritas – Red Bourbon. While it is not as delicate as Gesha, Red Bourbon is one of the most culturally and genetically important Arabica varieties in the world and is known for outstanding quality in the cup when grown at the highest altitudes.

Bourbon is one of the earliest cultivars of the Typica group. It was first introduced in 1860 to Southern Brazil. From Bourbon Island in the Indian Ocean (now La Reunión), where it was cultivated by French missionaries in the early 1700s, it later spread into South and Central America. Bourbon is known for its distinctively sweet and delicate flavours. The plants are fragile and don’t produce as much fruit as some other varieties.

This coffee was first fermented in open tanks for 19 – 22 hours. Following this, it was de-pulped without water and fermented in mucilage for another 35 hours. Water is a precious resource high in the Cauca Valley, so the producers work hard to reduce their water consumption by using this alternative process. After the second fermentation, the remaining mucilage was removed mechanically, and the cherries were dried in mechanical driers to achieve a moisture content of 11%. This carefully calculated process combined with our arduously researched roast profile creates a beautiful flavour landscape exhibiting delicate notes of cantaloupe melon, peach and lychee. The cup finishes with a unique, tangy tomato finish that ensures the coffee leaves a strong mark in your memory. The cup is further characterized by a creamy, buttery body and a lasting sweetness that remains on your palate for prolonged periods after you have finished your cup!

It gives us immense pride to present to you this lot of Anaerobic Fermented Gesha Naturals from the Manos Juntas Micromill located in the Sotara area of Colombia’s Cauca department. As a world-renowned coffee varietal, Gesha has made the pages of history bringing coffee lovers across the world some of the most phenomenal flavor notes that dazzle even the most experienced palates.

We have invested tremendous efforts to evolve our roasting techniques to bring the best out of this coffee. You will find intense perfumed florals with exotic, bright acidity and sustained sweetness. Aromas of jasmine and rosewater await to greet you into your first sip that will reveal notes of bergamot and blackberries. The rich body is characterized by a scrumptious, juicy texture that will keep you smacking your lips and slurping for more. A strong and lingering sweetness ensures an overall enthralling and pleasant experience.

This particular offering was first purchased in its cherry form when delivered to the mill by eight local producers, on the day of harvest. Upon arrival, the Brix and pH were recorded, and the cherries were placed in large hermetic tanks for a five-daylong anaerobic fermentation: Each tank was labeled with the name of the producer to retain traceability. During this period, nitrogen gas was introduced into the tanks in order to stimulate the yeast. Brix and pH were measured constantly throughout this process and were used to determine the stopping point for fermentation; the coffee was then subjected to 20°C temperatures in order to cease fermentation and remove the yeast and other microorganisms. The cherries were then aged in tanks for a period of five more days before they were taken to solar dryers. Drying took approximately 30 – 45 days.

Bittersweet notes of dark rum with undertones of black currant and the Jujube fruit lead into an anti-climactic smoky finish. This coffee is undoubtedly only for the brave-hearted!

We recommend trying this in V60 pourover, Chemex and Aeropress. It’s a perfect choice for cold brew lovers as it induces a lot of character into cold-brew drinks.

Deeper explorations will reveal a mysterious, tartish note of Barbados Cherries leading to juicy red grapes and a very subtle hint of sweet mangoes. Our light filter roast keeps the flavours bright and lively allowing the coffee to express more complexity as the temperature cools.

Bold, fierce, and unforgiving – Sylvia Plath destroyed the subtle veneers of elegant vocabulary and fluffy lyrics to explore and express some of the deepest, strangest, darkest AND delightful human emotions through her poetry. Her verses live on inspiring honesty in writers and artists across the world pushing them to create art that is bold and transcends the opinions of critics. We believe creators of coffee must aspire to do precisely the same. We’ve partnered with Kudiraipanjan Estate – a producer who shares a similar vision as us for the development of coffee in India – to create SYLVIA for you, and we know that you’re going to absolutely love it!

Process

This lot of naturals was anaerobically fermented and comes from Kudiraipanjan Estate where a perpetual passion for experimental processing is yielding great coffees year after year.

Once ripened cherries on the coffee trees reach the desired brix level, they are selectively handpicked by highly-trained pickers, washed in water tanks to sort out light beans, dust, foreign particles and other wastes. Further selective sorting is done to eliminate over-ripened & under-ripened cherries. Once the the cherries are ready, they’re deposited into specially designed fermentation barrels in which the coffee is sealed without oxygen & fermented for 72 hours. The pH and temperature levels are carefully monitored during fermentation. Following this, the fermented produce is moved to drying the zone. Drying is done in varying temperature and humidity conditions over a period of 20-23 days until the desired moisture levels of 11 – 11.5% are achieved. This unique process allows for bright acidity and sweetness to develop in the beans inside.

Process: Only the sweetest cherries – with a brix level above 18 – are selectively handpicked in the honey process. The cherries are then sorted to eliminate fruit that have not completely ripened yet. The fruit are then pulped without using water. Pulping is done such that some of the mucilage is still left over the inner parchment. The first stage of drying involves drying in open sunlight for 3 days. Following this, drying takes place on raised beds in shade to slow down the process and reduce the impact of sunlight. The coffees are finally stored and allowed to rest for 30 days before it is shipped of to the mills.

They share a great connection with their land and an immense passion for farming and processing coffee. With a strong focus on how their practices influence the ecosystem and the surrounding environment, they bring stunning coffees to roasters across India and around the world. Their process thrives on phenomenal attention to detail which in turn assists the roaster in understanding the coffee treasure being worked with to achieve a perfect transformation from green to roasted coffee. It is a rare and special ability to draw upon the most detailed observations in nature and the happenings around one to construct arduous works of art that are shrouded in curious metaphor but conceal the most beautiful truths about the earth and the universe around us. It is only fitting for us to dedicate this lot to Henry David Thoreau – the masterful transcendental author of the renowned literary work  Walden.

Thoreau wrote a great deal about his solitary life in nature and how true contentment was found in learning to live in self-sufficiency. The illumination of Thoreau was a consequence of his deep understanding of nature’s harmonies which were a result of his simple day-to-day life lived in a small cabin beside Walden Pond. Experience Thoreau – an elegant, washed lot with floral aromas and notes of lemon and green grapes – a work of art born out of the harmony between arduous efforts of the Thipaiahs and the natural soul of Kerehaklu Estate.

Indian coffee is an infinite landscape that we are perpetually exploring only to find new gems that reveal themselves to us season after season. One such gem we encountered this year was Zoya Estate in the Baba Budan Giri region. The family of Ishrath Ali that runs the estate boast experience of almost three centuries of producing coffee in the region. This year, they produced an amazing lot of AAA Naturals comprised of the Selection 795, Chandragiri and Selection 5B varietals. A carefully tailored omni roast profile from our end empowers this coffee with the special ability to taste oustanding across espresso and filter brewing. The cup is characterized by a pleasant cane sugar sweetness, is full-bodied and with taunting hints of peach and lychee.

 

Process:

Berries are handpicked which have achieve ripeness in the range of 90% – 110%. The fermentation done was a mix of 6-hour Aerobic Fermentation followed by 16-hour anaerobic fermentation. The drying time was for a period of 16 days during which the coffee was closely monitored to ensure no undesirable effects were caused by climactic conditions. The beans were rested for a period of 3 – 4 months under cool conditions. Dry milling was done with the help of Mr. Ashok Patre of Ratnagiri Estate. The beans were finally screened and sorted to separate AAA beans the yield a high quality lot with complex characteristics.
