Enjoy a rich aroma of jackfruit, inviting a memorable tasting experience. On the palate, this coffee reveals distinct spice notes of nutmeg and clove, leading to a lingering spice finish. The tactile sensation is rich and buttery, achieving a harmonious balance with medium sweetness. The coffee’s mild acidity complements the overall profile, contributing to a refined and cohesive tasting experience.
The anaerobic fermentation process used by BEWILD was meticulously designed to enhance flavor depth and complexity. Initially, ripened cherries were thoroughly cleaned and sealed in airtight bags to create an oxygen-free environment. These bags were then placed in HDPE barrels, where they underwent a fermentation period of 10-11 days. This controlled anaerobic fermentation allowed for the development of distinctive flavor characteristics.
Following fermentation, the cherries were carefully slow-dried in a polyhouse, maintaining controlled temperatures for 22-25 days to achieve the optimal moisture level. Once dried, the coffee was packed and left to rest for 45 days, a crucial step to preserve and lock in its flavors before the hulling and roasting processes commenced. This meticulous method ensures a rich and nuanced cup profile, showcasing the coffee’s exceptional qualities.
