Our first introduction to Yogitha and Aveen Rodrigues occurred at a brewing event, where we had the opportunity to experience the exceptional creations emerging from their farm. As roasters, we often experience a sense of anxiety when we encounter outstanding coffees late in the harvest season, fearing they might already be sold out. Fortunately, we managed to secure our first lot from Melkodige and immediately included it in our Showcase collection due to its exceptional qualities.

CIMA yeast is specifically developed for use in the specialty coffee industry to enhance the fermentation process. This yeast plays a vital role in coffee processing by contributing to the development of unique flavors and aromas. Our filter profile reveals a fascinating blend of fruitiness and dark chocolate, which is sure to pique interest and provide satisfaction. We’re eagerly anticipating more extraordinary coffees from Yogitha and Aveen, whose delightful approach to coffee is beautifully summarized in their simple yet profound quote: “The experience of a great cup of coffee is like sipping on a rainbow—it can stir our senses, rejuvenate our bodies, lift our spirits, and warm our hearts. Indulge in the sweet aroma of ripe papayas that unfolds into a rounded body with sparkling acidity. This sensory experience is enriched by luscious notes of guava and subtle hints of pecan nuts. As the flavor journey continues, it gracefully transitions to a satisfying dark chocolate finish.

This versatile coffee shines across all brewing methods, whether enjoyed through the elegance of pourovers, the precision of Aeropress, a refreshing cold brew, or the robust embrace of a French press. Perfect for those who seek a vibrant cup with layers of fruity richness and a smooth, decadent conclusion.

Ripe coffee cherries were selectively hand-harvested and then separated by density using a flotation tank. The cherries underwent a controlled 80-hour fermentation in anaerobic fermentation tanks, where Cima yeast was introduced. After fermentation, the cherries experienced a meticulous process to ensure optimal flavor development.

Following fermentation, the coffee was transferred to trays under shade for meticulous drying. It was carefully dried for more than twenty days to ensure even moisture removal, and the team of workers regularly checked the coffee to maintain optimal drying conditions. Once the coffee reached the desired moisture content, it was carefully bagged and allowed to rest, enabling the flavors to fully mature and develop.

Perched 4,000 feet above sea level, Melkodige Estate is nestled within the tranquil mountain ranges of the Kudremukh Bio Reserve, situated in the Western Ghats—one of the world’s top ten biodiversity hotspots. At this elevation, Arabica coffee beans mature at a relaxed pace, allowing for the cultivation of the exquisite flavors that coffee connoisseurs cherish. Presently, this eco-friendly plantation, renowned for producing high-quality pure coffee, is expertly managed by horticulturists Aveen and Yogitha Rodrigues.

Melkodige Estate is home to exclusive heirloom varieties such as Sln 9, Sln 795, Sln 6, and Sln 5, alongside a selection of dwarf varieties like Chandragiri, HDT, Catimor, and Obatã. The estate employs diverse processing methods to craft its coffee, including fermented washed coffee, anaerobic fermented coffee, aerobic fermented coffee, yeast fermented coffee, and pulp sun-dried coffee. Each batch is professionally Q-graded to ensure the highest quality.
