Sreeraksha has been working on multiple experiments at his farm over the years and has constantly produced coffees that have pushed the boundaries of espresso. Dried Berries & Raisins is another intriguing work of art that will pique interest in lovers of funky, groundbreaking espressos who revel in fruity profiles.

The INTENSO yeast used in the processing of this lot enhances mouthfeel, fruit notes and overall sweetness. It’s used by producers to push the overall complexity in the cup and deliver a higher, more sophisticated sensory experience. This coffee also promises a sweet, chocolatey cold brew with fruity undertones. Go ahead and use it to fuel your most adventurous coffee experiments!

This tasting experience starts with a rich and inviting chocolate aroma. Its syrupy mouthfeel is enriched by a bright and juicy acidity that lends to the overall sweetness. You’ll taste notes of dried berries, golden raisins, a hint of rum and roasted cashews that lends warmth and nuttiness to the flavour. As the coffee cools, a distinct pineapple note appears, offering a refreshing, unexpected twist to the finish.

Ripe coffee cherries with Brix levels of 20-23 were meticulously hand-picked, ensuring only the best quality cherries were selected. This initial selection was followed by a sorting process to remove any green or under-ripe cherries. The cherries were then washed with pristine water from a stream flowing through the estate, and floaters were discarded to guarantee quality.

Following this, the cherries were mixed and fermented with Intenso yeast for a controlled period of 72 hours, allowing the yeast to enhance the flavor profile of the cherries. Once the fermentation process was complete, the cherries were carefully laid out on raised beds to begin the drying phase.

The meticulous drying process lasted a minimum of 20 days, during which the cherries were regularly turned and monitored to ensure even moisture removal. This care and attention during drying helped develop the coffee’s unique flavor characteristics. Ultimately, once the desired moisture content of 11.5% was achieved, the coffee was ready for the next stages, reflecting its refined flavor notes of dried berries, golden raisins, roasted cashews and rum.
