This coffee opens with a distinct malt aroma enhanced by undertones of black pepper that add a touch of spice and complexity. As you savour the coffee, rich notes of sweet and nutty Turkish Tobacco emerge, creating the smoky signature profile of this lot. Medium body, perfectly balancing texture and flavor is complemented by a pleasant hint of acidity just enough to enliven the cup. The mild, lingering sweetness rounds out the experience, ensuring a harmonious interplay of flavors that keeps you engaged with each delightful sip.
At Dunduga Estate, the washing process used enhances uniformity and the overall profile of the coffee. After harvesting, the coffee cherries are promptly sorted to remove any underdeveloped or damaged fruit. The selected cherries are then subjected to a thorough fermentation process, typically lasting 12 to 24 hours. This step allows the natural sugars and mucilage to break down, facilitating the removal of the outer layers.
Following fermentation, the cherries are washed with clean water, ensuring that all residual mucilage is removed. This washing not only contributes to the uniformity of the beans but also plays a crucial role in enriching the distinct, smoky character found in this lot. After washing, the beans are spread out to dry in the sun or in specially designed drying facilities, allowing them to reach the ideal moisture content.
