Coffee processing is moving through an exciting era of experimentation. Yeasts, co-ferments and increasingly inventive fermentations continue to push the boundaries of what coffee can taste like. We love exploring that world, but we remain equally committed to something fundamental: exceptional washed coffees.

For many in our community, the clean, structured character of a washed coffee remains an essential part of the coffee experience. We understand that deeply, and washed coffees will always form a major part of the heart of our portfolio.

This Anaerobic Washed lot from Elkhill Estates sits beautifully within that philosophy. It introduces a measured layer of contemporary fermentation while staying firmly rooted in the character and precision we seek from a great washed coffee. It’s about exploring where specialty coffee is going while keeping the classics we love very much in the mix.

The cup opens with warm aromas of jaggery and cane sugar, setting the stage for a rounded and expressive profile. Notes of apricot and peach tea emerge through the cup, complemented by gentle blackberry undertones that linger into the finish. A rich mouthfeel gives the coffee depth and structure, while balanced acidity and medium sweetness keep the profile composed, clean and easy to enjoy.

Hand-picked, selectively ripened cherries of SL9 and Chandragiri are first floated to remove defects and debris before being thoroughly washed. The cherries are then pulped using fresh spring water and placed under controlled anaerobic conditions for 36 hours, allowing the fermentation to develop greater sweetness, complexity and flavour while retaining the clarity associated with a washed process. Following fermentation, the coffee is carefully washed and transferred to raised beds, where it is slow-dried for approximately 18 days. This measured approach to fermentation and drying brings together the clean structure of a washed coffee with the layered character developed through anaerobic processing.

About the farm

Established in 1870, Elkhill Estates brings together six coffee estates spread across 1,600 acres in Coorg, Karnataka. The estates cultivate both Arabica and Robusta under a diverse canopy of native shade trees, including fig, rosewood and jackfruit, within the biodiverse landscape of the Western Ghats.

Coffee production at Elkhill is supported by dedicated infrastructure for pulping, fermentation, washing and drying, with both wet and dry processing carried out within the estate ecosystem. This integrated setup allows the team to work across traditional preparations as well as specialty processing methods, including naturals, fermented naturals, washed and honey-processed coffees.

With a history spanning more than 150 years, Elkhill combines its long-established coffee-growing heritage with a continued focus on processing and quality, producing coffees that showcase the diversity of its estates and the distinctive growing conditions of Coorg.
