As one of our sweetest cups of the season, the Natural Maceration lot from Harley Estate showcases a plethora of bustling aromas and fruit-forward flavours that will tickle all your senses. This lot is fermented without any yeast and highlights the potential complexity present in Arabicas from the Manjarabad region – a region typically renowned for its high-quality washed Robustas.

The profile of this coffee offers a captivating sensory experience, beginning with a distinct aroma reminiscent of chilly-sprinkled guavas. As the tasting unfolds, notes of cashew apples and grilled pineapple emerge, complemented by subtle hints of sweet lime that linger gracefully on the palate. The coffee boasts a rounded body, characterized by medium malic acidity, which provides a pleasing balance to its overall profile. The rich, lingering sweetness elevates the experience, making each sip a delightful encounter with vibrant flavours and an exquisite finish.

This lot underwent a meticulous Natural Maceration process, beginning with the selection of ripe cherries possessing a Brix percentage of 18, indicative of their optimal sweetness. Fermentation was carried out for approximately 24 hours in airtight barrels, creating anaerobic conditions that enhanced flavour complexity. This fermentation stage allowed the cherries to retain their natural sugars while developing unique characteristics. Following fermentation, the coffee was carefully dried until it reached the ideal moisture content, ensuring both quality and preservation of its flavour profile. This specialized process aimed to elevate the coffee’s inherent sweetness and nuanced tasting notes, resulting in an exceptionally complex flavour profile.
