In Colombia, the washed coffee process begins with handpicking ripe coffee cherries to ensure only the best are selected. These cherries are pulped to remove the outer skin and then transferred to fermentation tanks filled with water for 12 to 48 hours, allowing enzymes to break down the mucilage. Post-fermentation, the beans are thoroughly washed to remove any remaining mucilage residues.
Following washing, the beans are dried on patios, raised beds, or in mechanical dryers to reach the desired moisture level. Once dried, they are hulled to remove the parchment layer, sorted, and graded by quality. Finally, the beans are bagged and exported, resulting in coffee with desirable acidity and a clean cup profile.

The Hacienda La Claudina is located in Ciudad Bolívar, a traditional Colombian coffee town about 100 km southwest of Medellín. From its grounds, you can enjoy a spectacular view of the mountain range Los Farallones del Citará, which reaches elevations up to 3900 meters.
This estate produces 100% washed Arabicas, primarily from the Colombian Castillo variety, known for its remarkable resistance to plant diseases. The Hacienda also boasts several micro-lots, including the Yellow Bourbon variety, as well as natural unwashed green coffees and honey-processed micro-lots. During the harvest season, around 60 plantation workers diligently pick the ripened beans from the plants.
