As we expand our portfolio of bright and innovative Indian producers, we are delighted to welcome Pranathi Shetty’s Kolli Berri project to the Naivo fam! We begin with a small lot of Honey Sun Dried Chandragiri that is profiled for a sweet and syrupy espresso that’s pure nectar when taken straight or adds the right amount of punch with milk. Kollibyle Estate is a completely women-run plantation focused on sustainable farming and conservation of the environment. The fertilizers used are mostly organic and produced through composting, with minimal to zero use of fungicides and pesticides. This is a limited volume lot so make sure you grab it before it’s gone!

The experience begins with a plethora of aromas including dried berries and golden raisins. Citric notes of pomelo give way to apricot and vanilla syrup that are prominent in espresso brewing. This is a fully developed roast profile going slightly above medium to bring out a viscous, creamy texture in the cup that is enlivened by balanced citric acidity. The sweetness in the cup shines through from start to finish.

At Kollibyle Estate, the process for producing honey sun-dried coffee begins with the careful selection of ripe red coffee cherries. These cherries are first fermented for 24 hours to enhance the complexity of their flavors. Following fermentation, the cherries are semi-pulped, a process that removes part of the fruit’s skin while leaving some of its mucilage intact. This step adds to the beans’ distinctive sweetness and flavor profile. After semi-pulping, the beans are spread out on raised drying beds, where they are sun-dried until the ideal moisture content is achieved. This slow and meticulous drying process under the sun further develops the coffee’s unique characteristics, resulting in a balanced and flavorful cup.
