The cup profile of this coffee captivates with its enchanting aroma of raw mangoes, seamlessly transitioning to delicate notes of lychee and green apple. Hints of orange blossom add floral elegance, while the experience culminates in a luscious apricot finish. Bright citric acidity invigorates the palate, perfectly balanced by a rounded body and a rich sweetness that lingers delightfully.
Whole red ripe Arabica cherries were selectively picked and meticulously washed before being placed in stainless steel maceration tanks. These tanks were then pressurized with CO2 at 2.5 PSI, maintaining the environment for 75 hours to facilitate the breakdown of sugars within the cherries. This stage of carbonic maceration transformed the cherries, enriching the beans’ flavour complexity. Following the maceration, the cherries were moved to raised beds in a nursery-style drying yard, where a slow drying process occurred over 23 days. This deliberate drying period ensured that the coffee reached an optimal moisture level of 11.5%, preserving the quality and enhancing the final product’s taste.

Located in the lush foothills of India’s Western Ghats near the Sakleshpur/Belur region, Salawara Estate spans an impressive 145 hectares. Established by the British in the late 1880s, this venerable estate has thrived under the stewardship of the YDN group for three generations. The estate’s name, Salawara, translates to “string of blessings,” aptly reflecting its rich agricultural bounty. Its coffee cultivation is uniquely intercropped with pepper, areca nut, oranges, and silver oak trees, creating a balanced tapestry of richness and heritage. This harmonious integration not only enhances the soil’s fertility but also contributes to the nuanced flavors of the coffee.
Salawara Estate’s dedication to excellence is exemplified by its accolade as the recipient of the Best Quality Bean Award from Ernesto Illy in 2018, highlighting its commitment to quality and sustainable practices.
