The profile of this coffee is a captivating exploration of sweetness and complexity. It opens with alluring aromas reminiscent of ripe Alphonso mangoes, creating an inviting and tropical atmosphere. As the tasting experience unfolds, nuanced notes of strawberry cheesecake emerge, adding a delightful creaminess that is both rich and indulgent.
Hints of starfruit introduce a refreshing brightness, while the finish reveals subtle nectarine undertones, enhancing the overall fruit-forward character. With a luxurious, creamy mouthfeel, this coffee ensures a velvety texture that envelops the palate. The balanced malic acidity plays a vital role, providing just the right zing that complements the inherent sweetness.
This coffee is the Catuai varietal cultivated at 4,450 feet above sea level in the Godown Patte block at Ratnagiri Estate. Upon harvesting, the cherries, with a Brix measurement of 23.9, were meticulously sorted to remove floaters before being placed in stainless-steel fermenters for a 72-hour anaerobic fermentation (fermentation in a low oxygen environment).
After fermentation, the cherries were transferred to raised beds for drying. Over the course of 30 days, the coffee was dried slowly, with constant stirring to ensure even moisture removal. This careful processing accentuated the coffee’s distinctive flavor profile, reflecting the unique terroir of the farm and the intricate qualities of the Catuai varietal.
