At Moganad Estate, the process for washed Arabica coffee featured a precise triple fermentation. After harvesting, the cherries underwent initial fermentation as whole fruits. They were then depulped for a second fermentation to enhance flavour complexity. A thorough wash followed to remove all mucilage, leading to a final fermentation that refined the beans’ characteristics.
Post-fermentation, the beans were air-dried for 48 hours, gently reducing their moisture content. A nine-day slow drying on tables followed, carefully controlled to reach optimal moisture levels.

Characteristics

Moganad Estate is situated in a valley in the northernmost region of the Shevaroys, with cultivation areas ranging in elevation from 3,600 to 4,600 feet above mean sea level. The entire estate is intercropped with pepper, cloves, and nutmeg, enhancing the distinctive character of our coffee.
The majority of the coffee grown here is a mixed variety of Arabica, specifically S.9, S 5B, and Chandragiri. CxR Robusta also thrives on this estate, and notably, Moganad Estate was awarded the prestigious “Best Robusta Coffee in India” accolade in 2016. Additionally, Moganad Estate was featured in the September 2016 issue of the Global Coffee Report Magazine.
