Bella Giana was developed to offer an alternative high-quality Brazilian coffee with 100% traceability to a premium growing region and superior cupping quality. Following extensive analysis and comparative cupping sessions, this coffee from Cooperative Guaxupé was identified as the ideal choice. Expect to experience distinct spice notes of white pepper and coriander in the aroma, accompanied by rounded, nutty flavor notes. The pulped natural process begins with handpicking the ripe cherries, which are then transported to the processing facility to maintain optimal freshness. The cherries are partially depulped, leaving some mucilage on the beans. These beans are then spread out to dry in the sun on raised beds, where they are regularly turned to ensure uniform drying. This method enhances the coffee’s inherent sweetness and complexity by allowing the mucilage to partially caramelize on the bean. Finally, the beans are hulled and meticulously sorted to ensure that only the highest quality beans are selected for export.
