This AA washed lot comes from Mondul Estate, a 211-hectare farm located in northern Tanzania’s Arusha region — within Maasai territory and managed under the Burka Estates group. Established in 1931 and acquired in 2007, Mondul is known for its structured operations, high elevation, and consistent processing standards.

Washed and dried on raised beds using spring water from the estate, this lot reflects the hallmarks of Tanzanian coffees: floral aromatics, tangy-sweet acidity, and a clean, tea-like finish. Our filter roast is intentionally light, with just enough development to preserve origin clarity while unlocking balanced sweetness.

Mondul represents a model of controlled production — from farm management to cup profile — delivering a coffee that’s precise, articulate, and rooted in process.

The dry aroma opens with a flicker of tamarind and citrus blossom — sharp, fragrant, and just a little wild. Add water, and the cup leans into green tea — calm, clean, and quietly complex. On the palate, wood apple takes the lead — tart and textured — before tapering into a finish of black tea: steady, tannic, and quietly lingering. Bright malic acidity gives the structure lift, while a rounded body holds everything in balance. There’s sweetness throughout, but also a fine thread of bitterness — not a flaw, but a spark. Something that keeps you coming back. Something that doesn’t settle.

At Mondul, timing is tight and the system is dialed. Cherries are delivered to the mill within six hours of picking — no delays, no degradation. Once received, they’re graded, hand-sorted, and run through a Pinhalense de-mucilager. From there, parchment is soaked in clean water sourced from the estate’s own natural spring — water that’s used efficiently, recirculated, and responsibly drained into seepage pits.

Nothing goes to waste here. The cherry pulp is repurposed — combined with worms to produce nutrient-rich organic fertiliser, which goes straight back into the soil that grew it. A closed-loop system with purpose. After soaking, parchment is rinsed and sorted through washing channels, then spread onto raised African beds. The first 48 hours are hands-on — constant turning to ensure even drying. The full drying cycle runs up to 7 days, until the parchment hits 12% moisture or below. From there, it’s off to Moshi for precision milling and bagging, before making its final move to Dar es Salaam for export.

Every lot is cupped daily at Burka’s in-house lab — no batch leaves without passing the test. At Mondul, washed isn’t just a method. It’s a system of intention, backed by numbers and built to perform.

About the producer

Established in 1931 and acquired by Burka Estates in 2007, Mondul Estate is a 211-hectare coffee farm located on Mondul Mountain, approximately 25 /km from Arusha the heart of Maasai land. With its high elevation and fertile terrain, Mondul is ideally positioned for producing high-quality Arabica coffee.

The broader Burka group, which includes Burka, Selian, and Mondul Estates, employs approximately 200 permanent staff and around 200 daily casual workers. During the peak harvest season, the workforce expands to nearly 5,000 individuals, all dedicated to meticulous cherry picking and processing.

Mondul places a strong emphasis on worker welfare. All permanent staff are provided housing across four residential camps and receive a minimum salary set at 20% above the national requirement. Contracts include social security benefits and Labour Union membership, while an internal estate credit union supports employees with loans and guidance related to education, healthcare, and home construction.
