This cup opens with dry aromatics of mosambi and soft strawberry, followed by subtle clove on the wet aroma. On the palate, ripe mango leads the way into a bittersweet walnut finish, tapering off with gentle fig notes. Expect a bright, slurpy citric acidity balanced by a rich, creamy mouthfeel that keeps the cup expressive but smooth.
At 3,400 ft, SLN 9 cherries were selected only at peak ripeness (above 18° Brix) and prepared for an inoculated natural fermentation. Pichia yeast was introduced and the lot was fermented under controlled conditions for 36 hours, allowing fruit sugars to be converted into aroma-active compounds. This process enhanced ester formation, organic acid development, and glycerol production, contributing to brighter fruit expression, a smoother texture, and improved consistency. After fermentation, the coffee was shade dried for 24 days, enabling slow moisture reduction and preserving sweetness, clarity, and layered complexity in the final cup.
