Breaking from convention, this lot channels Ashok Patre’s experimental mastery into a strikingly floral profile that stands apart from the sweet, winey, and fruity leanings typical of India’s innovative fermentations. Every stage of the post-harvest journey at Ratnagiri reflects Mr. Patre’s hallmark precision and consistency, giving roasters the confidence of a clearly defined cup year after year. Distinct and versatile, it shines in pourovers, bursts with character through the Aeropress, and delivers layered depth in a French Press — a compelling case for its place in this year’s dedicated Ratnagiri Vault collection.

This coffee presents a refined and expressive bouquet, led by the distinctive fragrance of jasmine, layered with the soft elegance of magnolia, subtle notes of bubblegum, and the delicate allure of tuberose. On the palate, medium sweetness and body are harmoniously balanced by a well-structured acidity, with a trace of mild bitterness providing depth and balance. The result is a precise and floral cup, distinguished by clarity, complexity, and composure — a testament to meticulous processing and exceptional raw material.

At Ratnagiri, handpicked cherries underwent a controlled 52-hour anaerobic fermentation in sealed bio-fermenters using selected lab-cultured microbes to enhance flavor development. Following fermentation, the coffee was dried on raised beds for 27 days under carefully monitored conditions to ensure even drying and optimal preservation of quality. This precise approach maintained the coffee’s distinct floral character while enhancing complexity, resulting in a clean, expressive cup that reflects both the meticulous processing and the inherent quality of the cherries.

About the farm

Ratnagiri Estate is an environmentally abundant corner of the majestic South Indian Western Ghats near Bababudangiri, the place where coffee in India originated. Spread over 117 hectares, Ratnagiri has an impressive yield of quality specialty coffee successfully inter-cropped with fine pepper. Ratnagiri literally means Pearl Mountains, and the dense silver oaks that tower over remarkably flavourful shade grown coffee give a silvery hue to the hills illustrating the name. At Ratnagiri, generations of the Patre family have dedicated their lives since 1927, caring for a land that has rewarded their passion and perseverance. With Coffee, Pepper and Nature.

Ratnagiri Estate coffee is a popular purchase by fine flavour seeking palates across the world. The farm follows strict quality standards and has its own water supply from two freshwater streams following strict guidelines of government quality and pollution control boards. With a strong commitment to environmental conservation and sustainability, the coffee from the estate is a fine blend of art and heart!
