This floral signature presents itself with clarity in both orthonasal (aroma on the nose) and retronasal (aroma rising from within the mouth) perception, framing the entire sensory experience. Beneath, a gentle sweetness recalls ripe squash melon, interwoven with fleeting impressions of watermelon and lychee. The finish is swift yet refreshing, leaving the palate cleansed and uplifted. Balanced acidity and a poised body work in harmony, consistently elevating the rosewater note from first sip to last. This lot underwent a meticulously controlled anaerobic fermentation in sealed bio-fermenters for 48 hours, using selected lab-cultured microbes to guide and enhance flavour development. The absence of oxygen during fermentation allowed for precise modulation of acidity and the expression of floral aromatics. Following fermentation, the coffee cherries were dried on raised beds for 23 days under careful monitoring. This extended, even drying preserved the coffee’s delicate bouquet, refined sweetness, and delivered a clean, well-structured cup with a pronounced floral signature.
