Some coffees born from experimental fermentations have earned the label “dirty” from traditionalists, pushing producers to fine-tune processes that balance sweetness with clarity. This lot from the Ratnagiri Vault shows how far Ashok Patre has taken that challenge. His work with microbial cultures, controlled fermentations, and precise drying has steadily shifted Ratnagiri’s output—from wild, funky, boundary-pushing cups to more nuanced, elegant expressions that remain just as memorable. Here, sweetness is immaculate and clarity uncompromised. Every note is sharply defined, every layer distinct. Built for espresso, it offers a fruit-forward cup—syrupy, sweet, but balanced. Its clarity translates seamlessly into refined pourovers, while its richness anchors deeply satisfying cold brews.

The cup opens with layered aromas of prunes and pineapple jam—dark, sticky sweetness lifted by tropical brightness. On the palate, figs bring depth while starfruit cuts through with a crisp, refreshing edge. A balanced malic acidity runs through the cup, giving it apple-like clarity without sharpness. The buttery body rounds the structure, carrying a rich sweetness that lingers well beyond the sip. As espresso, it’s sweet and fruit-forward yet composed; its developed sweetness also shines in pourovers and brings clarity to cold brews.

Cherries underwent a 48-hour anaerobic fermentation in sealed bio-fermenters, cut off from oxygen and guided by lactic acid bacteria (LAB) cultures. This setup gave microbes the stage to work with precision, shaping acidity and unlocking bold fruit character while avoiding the unpredictability of open-air tanks. Once fermentation was complete, the cherries were laid out on raised beds to dry for 21 days. The slow pace drew sugars deeper, intensifying sweetness and locking in a vibrant, fruit-saturated complexity.

Spread over 117 hectares, Ratnagiri has an impressive yield of quality specialty coffee successfully inter-cropped with fine pepper. Ratnagiri literally means Pearl Mountains, and the dense silver oaks that tower over remarkably flavourful shade grown coffee give a silvery hue to the hills illustrating the name.
