Ashok Patre bends tradition by bringing an Arabica mosto culture into Robusta processing—engineering a cup that is refined, complex, and confident enough to rival any specialty Arabica. Mosto is the liquid drawn from fermented coffee cherries, packed with wild yeasts, bacteria, and enzymes that act as a catalyst to build layered flavor during fermentation. The cup opens with bold aromas of jackfruit and nutmeg spice—heady, immediate, unmistakable. The flavor arcs into sweet cream, before finishing with a lingering note of dried mango. What drives the experience is texture: a rich, luscious mouthfeel that scores full points, heavy yet refined. Sweetness and spice lock arms to display Robusta’s true signature—powerful, complex, unapologetic. This is proof that Robusta is not filler; it is future—standing tall in the world of specialty.

Ripe CxR Robusta cherries are sealed in bio-fermenters for 48 hours of anaerobic fermentation, inoculated with an Arabica mosto culture—a liquid starter derived from the mucilage and juice of fermented Arabica cherries. This culture is rich in wild yeasts, bacteria, and enzymes, and acts as a catalyst, shaping the microbial environment to drive complex flavor development. After fermentation, cherries are dried on raised beds for 28 days as a natural, locking in structure and intensity. The process delivers a robust cup with clarity and layered expression.

Ratnagiri Estate is an environmentally abundant corner of the majestic South Indian Western Ghats near Bababudangiri, the place where coffee in India originated. Spread over 117 hectares, Ratnagiri has an impressive yield of quality specialty coffee successfully inter-cropped with fine pepper. Ratnagiri literally means Pearl Mountains, and the dense silver oaks that tower over remarkably flavourful shade grown coffee give a silvery hue to the hills illustrating the name.
