Open your bag of Rosewater & Squash to welcome the rich, floral aromas of rosewater with very subtle hints of lavender. The distinct rosewater note is prominent in both orthonasal (sniffing) and retronasal olfaction (odors emanating from within the mouth). You’ll find a mild sweetness reminiscent of squash melons and hints of watermelon and lychee that lead to a quick but refreshing finish. Acidity and body are both balanced complementing the distinct rosewater note throughout the tasting experience. Our filter roast is around light to medium that aims at bringing out the delicate, floral notes while ensuring enough sweetness to make this a rounded and memorable cup.
This coffee underwent a 72-hour culture process and was washed. It originated from the Cauvery varietal, grown on Ratnagiri Estate at an elevation of 4,300 feet in the Betamare Patte block. At the time of harvest, the Brix level of the coffee cherries was 23.2. Following floater removal, the cherries were placed in stainless-steel fermenters. A specific strain of yeast and lactic acid bacteria was added, and fermentation was allowed for 72 hours (about 3 days) in a carbon dioxide-rich environment. After fermentation, the coffee was depulped, washed, and placed directly on raised beds for drying. The drying process lasted 26 days (about 3 and a half weeks), with the beans being constantly stirred to ensure even drying.
