Aromas of dried raisins and ripe stone fruit open the cup, leading into delicate tea-like notes and a gentle tang of mosambi. Subtle hazelnut undertones emerge through the finish, adding warmth and depth. Medium sweetness and a full body give the cup structure, while a very gentle bitterness rounds out the profile, leaving a clean, balanced and lingering finish.
Ripe coffee cherries are carefully harvested and pulped to remove the outer fruit. The beans then undergo controlled fermentation, allowing the remaining mucilage to break down naturally before being thoroughly washed with clean water. They are subsequently dried to an optimal moisture level, producing a clean and articulate cup that brings forward the coffee’s inherent sweetness, acidity and distinctive origin character.
