After the enthusiastic response to our whiskey and rum barrel-aged coffees, it was only a matter of time before another barrel entered the picture. Santé explores what happens when coffee meets the lingering character of wine—where vinous aromatics, fruit and oak become part of the coffee rather than simply flavours we associate with it.

In the cup, Shiraz-like aromas lead into raspberry jam and peach, with rich sweetness and a bright, balanced finish. It’s unconventional, unmistakably barrel-aged, and made for those who enjoy discovering coffee outside its usual boundaries.

The cup opens with the vinous aroma of Shiraz grapes, carrying a distinct wine-like character from the barrel ageing. Raspberry jam follows with concentrated fruit sweetness, while notes of peach bring a softer stone-fruit quality to the cup. The coffee has a rich, rounded tactile with high sweetness throughout. A balanced acidity provides enough brightness to lift the fruit character without becoming dominant, resulting in a cup where the wine influence remains clear while the underlying coffee retains its structure.

Carefully selected green coffee beans are aged in seasoned wine barrels, allowing them to gradually absorb the aromatic compounds and residual character held within the wood. Over several weeks, the coffee develops layers of vinous fruit, gentle sweetness and subtle oak character while retaining its inherent coffee profile. The beans are then removed from the barrels and rested before roasting, allowing the barrel-derived characteristics to settle and integrate with the coffee.

About the farm

Barrel ageing takes coffee beyond conventional processing by introducing another source of flavour development. Coffee is rested in barrels previously used for spirits or wine, allowing it to interact with aromatic compounds retained within the wood. The character of each lot changes with the coffee, the barrel and the time spent ageing—bringing anything from fruit and spice to oak and distinctly boozy notes into the cup.

Despite these flavours and aromas, barrel-aged coffee is non-alcoholic. The process is about the aromatic character imparted by the seasoned barrel, not the addition of whiskey, rum, wine or any other alcohol to the coffee. For us, the goal is to find the point where the character of the barrel comes through without overpowering the coffee itself.
