Here’s another treat for Robusta enthusiasts from innovative producer Ashish Rao, showcasing the endless potential of Robustas from the Coorg region. This is a versatile coffee that adapts to diverse brewing styles, whether it’s a bold French Press brew, a refined pour-over, a quick brew through the Aeropress, or a simple brew with a Channi if you’ve got no fancy equipment at home.

Our tailored roast profile for honey sundried Robustas brings out the sweetness in this coffee intertwined with distinct spice notes. The rich body and mild acidity are evident making this a delight for lovers of robust, punchy coffees without overwhelming bitterness in the aftertaste.

The cup opens with aromas of freshly baked brownies leading to notes of cumin and a smooth vanilla finish. The typical positive characteristics of a well-produced Robusta like rich creamy body, mild acidity and medium sweetness are prominent in the cup and enhanced by a perfect balance of spice and chocolate notes.

The Red Honey process begins with careful selection and preparation of the coffee fruits. Initially, the coffee cherries are meticulously pre-cleaned, with color sorting to ensure only the best fruits are selected. Floaters—lower quality cherries that don’t contribute to the flavor profile—are removed to maintain high standards.

After this sorting, the cherries are pulped, allowing the outer layers to be stripped away while leaving some of the mucilage intact. This step is crucial as it contributes to the coffee’s unique sweetness. The pulped cherries are then dried on raised beds within a polyhouse, a controlled environment that promotes even drying and helps preserve the flavors.

This meticulous Red Honey process enhances the coffee’s natural sweetness and complexity, resulting in a cup that offers rich, sweet notes balanced by intriguing spice.
