This coffee opens with distinctive aromas reminiscent of the Indian champakali sweet, lifted by hints of jasmine and red mace spice. On the palate, jasmine carries forward into nutmeg, settling into a soft cherry finish. The body is balanced, the acidity gentle, and the sweetness persistent, creating a clean, lingering aftertaste. A remarkable showing for Robusta, delivering refinement and nuance well beyond expectations.
At BEWILD Coffee’s Poomaale Estate, coffee begins in a landscape designed for longevity. The estate follows a permaculture philosophy built on highly fungal-dominant soil — ideal for perennial crops like coffee. This promotes deep nutrient cycling, biodiversity and root resilience, translating directly into complexity in the cup. Harvesting is entirely manual and block-wise, allowing each microclimate to be treated individually. Pickers return to the same block multiple times, selecting only fully ripe cherries to ensure precision and traceability.
One of Poomaale’s signature methods, Anoxic Fermentation, amplifies this terroir-driven approach. Fresh cherries from each block are sealed in oxygen-free stainless steel tanks at 18–22°C, where native yeasts and beneficial bacteria lead fermentation. Over 180 hours, temperature and pH are continuously monitored, and the process is stopped the moment the desired flavour direction is achieved. The cherries are then dried slowly on raised beds and rested under controlled storage.
