In the buzzing, thriving environment of experimental processing and funky, out-of-the-world flavour profiles, no true coffee lover can still say no to a uniform, terroir-true, bold and clean washed coffee that has been processed with attention to detail. Pranoy Thipaiah’s Shieldtail Washed process involves a two-step sequential fermentation carried out for a period of 35 hours that pushes the boundaries of the classic washed profile the Chikmagalur region is known for – chocolatey, rich and smooth coffees with mild fruit undertones.

This lot exhibits the broadly unexplored potential of this terroir shining a bright spotlight on a basket of subtle fruit expressions and citrus florality that dance on the foundation of a rounded mouthfeel and bright, juicy acidity. Don’t forget, this is still a washed lot! No funkiness, no alien fermentation notes, but just clean, sweet, and pleasant citrus expressions complemented by mild notes of melons and a clean finish. If that’s your cup of tea, you’ll adore this coffee!

Begin your experience by taking some time to enjoy the aromas of bergamot orange flower intertwined with hints of peach. You will notice a bright, medium-sweet, citric acidity with your first sip that gently reveals the primary note of sweet lime with undertones of cantaloupe melons. The rounded body gives the coffee just the right amount of weight on your palate that ensures the coffee’s texture does not compromise its citrus expressions. You will observe a bittersweet orange peel finish that reveals itself on the sides and back of your palate drawing you in for another sip to keep the experience going. None of the notes are overpowering but the sweet acidity makes for a very satisfying and repeatable coffee experience. Enjoy!

The Shieldtail Washed process was carried out on coffee cherries picked at a Brix of 22.5 from the Mavinahatti Upper Block at Kerehaklu Estate. The block has a high density of Coorg oranges, Gajje Lemon trees in the understory with Cluster Figs and Indian Red Cedar in the canopy. The red soil in this region is rich in iron and humates with good levels of microbial activity. The clean, ripe cherries were subject to pulping followed by a two-step sequential fermentation carried out for 35 hours. Following this, the produce was dried in polyhouses for a period of 19 days that allowed for the full maturation of the complex flavors observed in this lot.

Kerehaklu Estate, situated in the serene Western Ghats, serves as a tranquil retreat enveloped by diverse flora and fauna. Spanning 250 acres and just a short drive from Aldur village, this estate offers an opportunity to unwind and reconnect with nature. The estate’s origins date back to the 11th-12th century Kannada language, where ‘Kerehaklu’ translates to ‘the shelter by the lake.’

Ajoy, a fourth-generation coffee producer, combines traditional and modern agricultural techniques to cultivate and conserve this lush plantation. Pranoy, with a background in biology, focuses on enhancing post-harvest coffee processes and promoting the Western Ghats’ biodiversity, while Kivi, the estate’s adventurous beagle, accompanies Pranoy to explore the grounds.

Kerehaklu has been producing coffee since 1953, with a commitment to preserving the land’s biodiversity. The estate produces Arabica, Canephora, Liberica, and Excelsa varieties, using innovative processing methods to push sensory boundaries. With an average altitude of 3750 feet and significant rainfall, Kerehaklu is dedicated to maintaining ecological balance while crafting unique, high-quality coffees enjoyed worldwide.
