Our search for new and exotic varieties continues with this exciting new lot of the Sidra varietal from Finca Terrazas Del Pisque in Ecuador. The Sidra coffee variety is a relatively rare and highly sought-after cultivar known for its exceptional flavor profile and complexity. It is believed to be a hybrid that combines the best attributes of Bourbon and Typica varieties. Originating from Ecuador, the Sidra variety thrives in high-altitude environments, where the unique climate conditions contribute to its distinct characteristics.

Sidra is celebrated for its vibrant and intricate flavor notes, often featuring a combination of floral and fruity elements. These qualities make it a favorite among specialty coffee producers and connoisseurs who appreciate its nuanced and memorable cup profile. Due to its complexity and the care required in its cultivation and processing, Sidra coffee is typically produced in limited quantities, further enhancing its exclusivity and appeal in the specialty coffee market.

This experience begins with enticing aromas of green grapes and wild berries that invite the senses. On the palate, it reveals complex flavor notes of orange candy, black currant, and marmalade, each contributing to a rich tapestry of taste. The coffee’s vibrant and juicy citric acidity is beautifully balanced by its rounded body, providing both depth and structure. The experience concludes with a delightful honeysuckle finish, leaving a refined and memorable impression.

This Sidra washed lot from Finca Terrazas del Pisque undergoes a meticulously orchestrated processing method to preserve its quality and distinctiveness. Initially, the cherries are carefully harvested at peak ripeness. They are then depulped, removing the outer fruit layer to expose the beans. This is followed by a fermentation phase lasting 36 hours, which is crucial for enhancing the coffee’s flavor profile. After fermentation, the beans are thoroughly washed to eliminate any remaining mucilage. The washed beans are then spread on raised beds, where they undergo a drying process for an average of 12 days. This methodical approach ensures optimal air circulation and even drying, ultimately contributing to the coffee’s exceptional quality and flavor complexity.

About the farm

Finca Terrazas del Pisque is a distinguished 38-hectare estate, with 15 hectares dedicated to cultivating premium coffee, while the remaining land is utilized for avocado and citrus fruit production. Situated in Ecuador’s Pichincha region, this farm is renowned for producing approximately 15,000 kilograms of specialty coffee annually. The unique climatic conditions in this part of Ecuador allow for nearly year-round harvesting, ensuring that only the ripest cherries are meticulously selected for processing. These cherries undergo diverse processing methods, including Washed or Natural techniques, and are occasionally subjected to Anaerobic fermentation to enhance their distinct flavors.
