The Nut Job marks South India Coffee Company’s latest Robusta experiment — an extended 120-hour carbonic macerated natural that delivers a standout nut-driven profile with delicate floral aromatics. This lot demonstrates how far Robusta has evolved, offering depth and nuance once considered out of reach for the species. We continue to seek coffees that merge Robusta’s signature richness with the complexity unlocked through thoughtful fermentation, and this release stands as compelling proof of what the future of Robusta can be.

This cup leans confidently into nut-forward complexity, opening with aromas of roasted jackfruit seed and subtle nerium florality layered over jackfruit undertones. On the palate, pecan takes the lead, supported by a gentle lift of cinnamon toward the finish. A rich, creamy body anchors the experience, translating especially well in espresso brewing. Sweetness carries through well yielding a thick, syrupy shot that’s rounded off by a touch of bitterness.

This lot begins with strict selective hand-picking — only fully ripe cherries showing deep red to purple hues are harvested to maximise sugar content and ensure uniform fermentation. The cherries are immediately density-sorted in water tanks; high-quality fruit sinks while floaters are removed for composting.

Sorted cherries move into sealed fermentation drums for a 120-hour anaerobic process inoculated with a custom Saccharomyces Cerevisiae culture. Temperature and pH are monitored throughout to guide ester formation, boost clarity and deepen complexity. After fermentation, the cherries are transferred to raised beds inside a polyhouse and dried slowly for around 12 days with continuous raking to prevent hotspots and protect against rain and humidity. Moisture is measured closely until it reaches the ideal 11–12% range for safe storage and long-term flavour retention. Finally, the dried cherries are bagged in lined jute sacks and rested for two months to stabilise and harmonise the flavour profile before hulling.

About the farm

Mooleh Manay Estate is managed by Komal and Akshay, who took over from the fourth-generation coffee planter, Ms. G.G. Padmashree. The estate is located near the picturesque backwaters of the Harangi Reservoir in Coorg, Karnataka. It adopts a data-driven approach to farming and coffee processing, believing that data is essential for optimizing agricultural practices and ensuring the highest quality coffee production. The farm cultivates a variety of coffee species, including Arabica, Robusta, and Excelsa, and employs meticulous processing methods to bring out the best in the coffee. The farm is committed to continuous improvement and innovation and is actively involved in research on native Indian Coffea species and soil health.
