The pineapple-fermented Arabica from Baarbara Estate has been one of our bestsellers over the past two years. This year’s harvest takes on a new identity in our showcase collection as Tropical Splash, with a roast profile fine-tuned to push the boundaries of espresso brewing. Nestled in the lush Bababudangiri Range, Baarbara Estate, operated by fourth-generation producer Sreeraksha Pournesh, has made groundbreaking advances in post-harvest processing. Playful yet precise fermentation with pineapple introduces a vivid new layer of sweetness to the coffee. The result is a cup that captures the essence of the tropics — sweet, tangy, and lively. Crafted for brewers who seek character in every sip, Tropical Splash delivers a lipsmacking espresso and a sweet, refreshing cold brew, offering a memorable journey into the possibilities of coffee co-fermentation with fruit.

The cup opens with bright aromas of mosambi and pineapple layered with a hint of apricot. The cup is sweet and tangy, carrying a rich mouthfeel and juicy citric acidity. Distinct notes of pineapple, dried mango, and blood orange define its profile, culminating in a lingering citrus finish that is clean, vibrant, and memorable.

Only perfectly ripe cherries are harvested and pulped to remove the outer skin while keeping the mucilage intact. The parchment is then transferred into fermentation tanks along with freshly cut pineapple. During this stage, both the coffee mucilage and the fruit undergo natural breakdown, driving active microbial processes. The sugars and enzymes from the pineapple integrate with those of the coffee, enhancing sweetness and amplifying bright, fruity characteristics. Fermentation continues until both components decompose into a complex mixture of flavorful compounds. Once the target profile is reached, the coffee is carefully washed and laid out to dry under controlled sunlight until the beans achieve optimal moisture content, ensuring clarity and consistency in the cup.

The unique geography and diverse flora, including native trees such as Jackfruit, Jamun, Rosewood, Red Cedar, and Silver Oak, create ideal shade-grown conditions that enhance flavor complexity while fostering ecological balance.

Coffee at Baarbara Estate is hand-picked, hand-sorted, and meticulously processed using fresh stream water, ensuring quality at every stage. Shade cultivation not only slows ripening for richer, more nuanced profiles but also encourages biodiversity, with the estate serving as a thriving habitat for over 100 bird species and numerous mammals. Certified by Rainforest Alliance and UTZ, Baarbara Estate upholds global standards for environmental stewardship, sustainable farming, and fair labor practices.

Led by fourth-generation planters, the estate combines heritage with innovation. Research and experimentation are integral to its operations, resulting in the production of distinctive micro and nanolots. A resident agronomist oversees organic management and soil health, while Q graders rigorously evaluate processing and quality control.
