The cup opens with bright aromas of mosambi and pineapple layered with a hint of apricot. The cup is sweet and tangy, carrying a rich mouthfeel and juicy citric acidity. Distinct notes of pineapple, dried mango, and blood orange define its profile, culminating in a lingering citrus finish that is clean, vibrant, and memorable.
Only perfectly ripe cherries are harvested and pulped to remove the outer skin while keeping the mucilage intact. The parchment is then transferred into fermentation tanks along with freshly cut pineapple. During this stage, both the coffee mucilage and the fruit undergo natural breakdown, driving active microbial processes. The sugars and enzymes from the pineapple integrate with those of the coffee, enhancing sweetness and amplifying bright, fruity characteristics. Fermentation continues until both components decompose into a complex mixture of flavorful compounds. Once the target profile is reached, the coffee is carefully washed and laid out to dry under controlled sunlight until the beans achieve optimal moisture content, ensuring clarity and consistency in the cup.
