This year, he presents us with a remarkable Dark Honey, meticulously curated for optimal performance in espresso. With its rich and complex profile, this coffee exemplifies Utsav’s dedication to innovation and quality. The lot displays an enchanting aroma of dried berries. On the palate, notes of stone fruit merge gracefully with subtle hints of lychee, creating a complex and nuanced flavor experience. The coffee boasts a buttery body, providing a luxurious and rich tactile sensation. A finish with delicate hints of dry fruit adds to its sophistication. With perfectly balanced acidity and sweetness, this coffee excels as an espresso and in espresso-based beverages.

The processing for this Dark Honey lot involves a meticulous approach to enhance its unique characteristics. Initially, only the ripest cherries are carefully selected for harvest. These cherries are then packed for a day in vacuum bags, allowing controlled fermentation that enhances their intrinsic flavors. Following this step, the cherries are pulped without the addition of water, preserving the natural sugars and mucilage around the beans. The beans then undergo a drying process lasting 9-10 days, where they are sun-dried to develop a rich and complex profile. This methodical process contributes to the coffee’s distinctive flavor and tactile richness.

About the farm

Unakki Estate derives its name from the ancient “den of snakes” that has been an integral part of the region for over 400 years, revered by the local community. This name also pays homage to the resilient coffee community that has thrived amidst changing climate conditions. Situated in the Joldal Palya region of Chikmagalur, Unakki Estate is managed by Mr. P.E. Suresh, an advocate and fourth-generation planter, along with his wife, Mrs. Y.J. Sahara, and their son, Mr. Utsav Gowda, an advocate by profession.

Spanning 115 acres at an altitude of 4,000-4,500 feet above sea level, the estate is enriched with native shade trees such as banana, jackfruit, rosewood, avocado, dadap, and Indian kino. Arabica coffee, particularly the Chandragiri variety, is the primary crop, grown entirely under shade and intercropped with banana, oranges, avocados, and pomegranates.

The estate employs a dedicated labor force of 50-60 permanent workers and aspires to be a leader in coffee quality in the region, thanks to the invaluable contributions of Rakhi, R.D. Prakash, Suraj, and Thyagaraj.
