The superstar coffee that lit up our roster for many years is finally back—and it’s here to elevate your brewing game. Floral, wild, and crisp with juicy acidity, our latest washed lot from Idido, Yirgacheffe (pronounced yeer-ga-CHUFF-eh) in Ethiopia meets all the high expectations we typically set for Ethiopian coffees. If you’re weary of funky fermentations and on the lookout for clean cups that showcase the unique character of terroir, this coffee is sure to become your muse. We’ve settled on a light to medium roast that ensures the inherent terroir shines through, while the cup boasts enough sweetness to keep you musing—and coming back for more.

The cup bursts with crisp acidity and medium-high sweetness, carried by a wild bouquet of florals that come alive in both aroma and flavor. Expect a rounded, silky body layered with notes of raspberry and black currant, tapering into a gentle finish of orange blossom. This filter roast is a natural fit for manual brews—especially pourovers, where it truly comes into its own.

This lot is part of an improved process project that takes the classic washed Ethiopian profile and dials up the precision. Cherries were first meticulously sorted—85% perfectly ripe, 5% just underripe, and 10% slightly overripe—to achieve a deliberate balance of sugars and acids. After skimming off floaters in a water tank, the selected cherries were de-pulped and fermented for a full 72 hours. But here’s the twist: every 24 hours, the old fermentation water was replaced with fresh, cold water, keeping the environment clean and controlled. Fermentation unfolded slowly at a cool ambient temperature of 18.5 to 20.5°C, allowing complex flavors to develop gently and evenly. Once fermentation wrapped, the parchment was dried on raised African beds for 21 days, turned regularly to ensure uniform drying. The result is a cup that’s squeaky clean, thoughtfully layered, and unmistakably elegant.
