Brewing Instructions

For a specific coffee, refer to exact brewing parameters such as dose, grind size, ratio, and water temperature on the product page. 

Step 1: Gather Your Materials

  • South Indian coffee filter (metal filter)  
  • Freshly ground coffee (medium-fine grind)  
  • Kettle  
  • Scale  
  • Timer  
  • Steel tumblers for serving  
  • Milk and sugar (optional, as per taste)  
  • Spoon 

Step 2: Prepare the Equipment

  • Ensure your South Indian coffee filter is clean and dry.  
  • Boil water in the kettle to around 96°C. 

Step 3: Measure and Grind Coffee

  • Use a medium-fine grind size for the coffee beans, similar to table salt consistency.  
  • Measure out 30g of coffee beans, which is approximately 5 tablespoons. 

Step 4: Add Coffee Grounds

  • Place the top chamber of the filter on the bottom chamber, ensuring it fits snugly.  
  • Add the ground coffee to the top chamber, gently levelling it off without pressing it down. 

Step 5: Bloom the Coffee

  • Start the timer.  
  • Pour a small quantity of hot water (just enough to soak all the grounds) over the coffee in a circular motion to allow the coffee to bloom for about 30 seconds.

Step 6: Add Remaining Water

  • Slowly pour the remaining hot water into the top chamber over the coffee grounds. 

Step 7: Stir and Steep

  • Place the lid on the filter and allow the coffee to drip into the bottom chamber. This process should take around 10-12 minutes. 

Step 8: Prepare the Coffee

  • Boil milk as per your preference (typically around 100ml of milk for 50ml of decoction).  
  • Pour the filtered decoction into the steel tumblers.  
  • Add boiled milk to the decoction to achieve the desired strength. 
  • If you would like to consume the coffee black, skip the above steps and add 50 – 100ml (according to desired strength) of hot water to the full volume of decoction before serving. 

Step 9: Serve and Enjoy

  • Add sugar as per taste and stir well.
  • Use the traditional method of pouring the coffee back and forth between two tumblers or between a tumbler and a steel tiffin to aerate and create froth (if desired).
